What it is: A catch-and-release program for trophy-sized crabs and prawns: catch them in Sri Lanka and throw them into a sparkling kitchen at People’s Park. This is the first time that the award-winning Sri Lankan restaurant Ministry of Crab has set up shop on the island, and curiously, mysteriously and curiously – a win! – It didn’t make it to Singapore (they know a thing or two about crab), Hong Kong (they know a thing or two about trophy seafood) or Tokyo (they know a thing or two about global ocean supply) first. First Impressions: These aren’t the shrimp and crabs you know. They are prehistoric in size, towering over the little white plates they serve, mocking the puny, pathetic creatures called crabs and crayfish in the rest of the world and doubling their size for all to see. They are showing off. They are arrogant. They are arrogant. Damn, they are delicious. Have you ever chosen to order a prawn heavier than a newborn? No, you didn’t, unless you were in a 400-year-old Dutch hospital in Colombo, Sri Lanka, where the original crab department was located. It’s called prawns.
Last week I had half-sized prawns for lunch and it was still the biggest I’ve ever seen. I didn’t ask how they made them so big. I don’t want to know. I still have a hard time believing this is legal. It was covered in a dark layer of black pepper sauce, and when I pulled the head and tail apart, it poured out a delicious, oily pink cream, sort of like a Thai curry. That’s natural tomaley, in “‘zilla” proportions. It looks like you ordered for a single piece. They apologized for not having larger sized prawns.
But it’s not called the prawn department. The protagonists of this spectacle of hubris and gigantism are the Sri Lankan mud crabs, which start at 500 grams and go up to 2kg+ iterations called Crabzilla. The day we went, after lunch, we peeked into the kitchen as new shipments arrived from Sri Lanka and saw the crabs being taken out of their styrofoam boxes (their claws were tied and they were airlifted out of the water, presumably in an economy seat) and weighed separately.
The biggest batch we’ve seen is 1.6kg and is… this is… this is… porn? exaggerated? unnecessary? How did the animals used to be on this planet before they ate all the adults, now stuck eating smaller and smaller versions of themselves?
Cheapest Chilli Crab In Singapore All Under $80++

Some of Singapore’s best food is found in innocuous places, and Melburn Seafood is one of them. The sauce used in their version is a little spicy with a sweet and sour taste and their crab meat is fresh. Their butter crab rice noodle soup is also worth a try, but be sure to get there early (before 6pm) as they don’t take reservations and after 7pm the queue gets out of control.

Established in 1987, Jumbo Seafood has several branches across the island and is known for its seafood dishes. Their crab meat is tender and the sauce is more tomato-based than spicy, probably more suited to westerners. Notable is the addition of peanut butter to their chili crab sauce, which adds depth and creaminess, perfect for some steamed buns.
