That’s the basic formula for overnight oats and then you can get creative.

Note: it is also common to add up to 1/2 cup of Greek yogurt to the base mixture. Since research shows that adding dairy to oats can result in a reduction in phytic acid, I prefer to keep my overnight oats dairy-free and vegan. (If you want to make this recipe vegetarian, use maple syrup.)

You can make overnight oats with oat milk, coconut milk, cashew milk, hemp milk, or almond milk if you want to try a dairy-free option.

For extra protein, try adding a scoop of hemp hearts, which are a complete source of plant-based protein with all the essential amino acids your body needs. Or, if you prefer, you can add your favorite protein powder.

1. Mix. Add the oats, milk, flaxseed, sweetener, and any of the topping ideas (below) to a mason jar or other lidded storage container.

2. Leave overnight. Place a lid on the container and then place it in the refrigerator to chill overnight or for at least 2 hours. Soaking will soften the oats.

3. Enjoy it! When ready to eat, remove the lid and stir in the oats. You can enjoy them straight away or add a little extra liquid to loosen the texture.

Curious about other flavors? I also tested the mint chocolate and cherry almond versions, but I don’t recommend using even 1/8 teaspoon of mint or almond extract per serving. It’s too much.

Homemade almond milk is preservative-free, which I think makes it tastier, but it can go bad faster. If you use milk from the store, your oats can be refrigerated for up to 5 days.

Can you make overnight oats? Yes, I tested overnight oats using both almond milk and water and both “worked” in terms of softening the overnight oats. However, the almond milk makes the oats MUCH creamier and I found it more enjoyable. If you prefer to make your oats with water, I recommend adding a tablespoon of nut butter to make them creamier.

Can oatmeal be reheated overnight? If you prefer to eat your overnight oats warm, you can heat them on the stove or mini cooker at work or in the microwave in 30-second intervals. In that case, I would recommend adding more liquid as they will thicken even more when heated.

Is oatmeal gluten-free? Oats are naturally gluten-free, but may be contaminated with gluten-containing grains during the manufacturing process. Be sure to look for the “certified gluten-free” label when applicable. And when cooking for someone with celiac disease, be sure to check that they can tolerate oats, as not everyone can tolerate them, even when using gluten-free oats.

Can I use instant oats? Instant oats run nicely if you soak them overnight, but if you don’t mind a softer texture, this can work too.

Can I use steel cut oats? Steel cut oats will not soften overnight in the fridge like rolled oats. If you want a similar texture, you will need to boil them briefly, at least 5 minutes, and then let them soak overnight.
